Gado-gado , also called Lotek (in Sundanese) is an Indonesian dish comprising a vegetable salad served with a peanut sauce dressing. It is widely served from hawkers carts, stalls as well as in restaurants and hotel both in Indonesia and worldwide.

Gado-gado is part of a wide range of Indonesian dressing & salad combinations. In many places, to retain authenticity in both the production and flavor, the peanut sauce is made in front of the customers.

Ingredients:
50 grams of bean sprouts, brewed with boiling water, drained
150 grams spinach, cut, boiled, drained
150 grams spinach, leaves picked, boiled, drained
200 grams of bitter melon, seeded, trimmed
1 fruit squash, boiled
1 uncooked cucumber and lettuce, sliced
1 piece tofu, fried
1 piece of tempeh, fried
1-2 tablespoons fried onions
3 eggs, boiled, peeled
chips and crackers

Peanut sauce dressing

200 grams of peanuts, fried
2 red chilies
5 pieces of cayenne pepper
1 teaspoon salt
½ tsp shrimp paste
200 cc of boiled water

How to Make:
Sauce: all sauce ingredients except the water boiled, blended and smooth diulek. Oncerefined, the new insert boiled water. Stir well and cook, stirring until boiling, remove from heat.
Mix the sauce, vegetables, tofu and tempeh, stir well
Serve in a bowl, add egg pieces, sprinkle fried onions and squeeze of crackers or chips on it.

Serving For 3-4 people
